Ingredients:

2 pounds fingerling potatoes

1 cup Vidalia onion sliced

2 tablespoons Alicia’s Spice Co.® Southwestern Herb Seasoning Blend

2 tablespoons extra virgin olive oil (EVOO)

2 tablespoons water
-
1 tablespoon fresh chopped rosemary
Instructions:
- Preheat oven to 350*F.
- Thoroughly wash and chop fingerling potatoes.
- Cut onion into medium size slices.
- Combine Alicia’s Spice Co.® Southwestern Herb Seasoning Blend, EVOO, and water in a medium sized bowl and whisk.
- Add fingerling potatoes and onions to bowl and coat with seasoning mixture.
- Transfer mixture into 9"x13" glass baking dish.
- Bake for approximately 40 minutes or until crispy, stirring occasionally.
- Garnish with fresh chopped rosemary, serve and enjoy.
